One pot or roasting tin recipes that are impressive?

I have loads of family recipes I do in these but have in laws coming and wondering if I could do a baked curry or something? Ideally chicken based. Help!

Nadia's Peanut chicken traybake. I generally use 2 x 250g packs of gnocchi and ready made peanut butter. Goes down well in our house and can also be adapted for vegans (using maple syrup and vegan chicken strips).

Jamie Oliver is the king of lazy tray bakes! I often find it's not enough food though, so I usually add in some jacket potatoes or warm bread etc.
