Brussels sprouts soup

DH bought far too much green veg, so thought i'd make B.S. soup to save waste.

I'll include shallots, spuds & chicken stock, finish with cream. Possibly add some sherry as I only had the traditional MN thimbleful today.😀

What else would you add ? (We didn't have a trad dinner, so no turkey etc to add.)

Maybe some smoked bacon? We had sprouts fried in smoked streaky bacon and mashed up with some garlic and butter and it was UNREAL 🤤

I don't think it would be good and it will stink. Can you just roast them off asa aside dish instead, or bubble and squeak?

Just like mini cabbages right? So any cabbage soup type recipe would work. Or a play on minestrone using them to replace the greens?

bacon/pancetta. There is a cafe here that sometimes does bacon and cabbage soup and it is yummy.

Absolutely not, it'll stink!! My DD made some once with other vegetables, DGC walked in the house and asked who had farted!

Cream of Brussels sprout soup is surprisingly nice. Fry a leek and an onion in butter, add 3 sticks of celery and loads of sprouts halved . Thicken it with a couple of large potatoes. Add stock made with marigold vegetable bullion, but don't add too much because when the veg is soft add a tub of double cream and blend.

I love sprouts, my OH does not. I regularly make soup using them..
this is pretty much what I do but I also add leek, garlic, chilli flakes/oil plus a squeeze of lemon at the end. Have also added them to standard root veg soup or Daal (which I am making in the morning with our leftovers!)

Thanks for the helpful replies. I'll try the pancetta this time.

To those saying they stink, it's only when they're boiled too long !
I either roast, or yesterday I finely sliced then fried in butter & garlic.
So my soup will start with frying all veg.
