Turkey Roll

I am cooking a rolled turkey tomorrow for the first time (breast meat only). It weighs 2.5kg. There are so many cooking instructions out there. One says 1.5hrs for that weight which seems crazy!

I don;t have a meat thermometer.

Planning on Bringing joint to room temp.

Cook for just over 2 hrs, First 1.5hrs covered, last 30 mins uncovered

On bed veg and spash of water.

Then rest for 30 mins

DOes that sound OK?

Do you have a probe thermometer? I'd be tempted to follow the instructions and check to see if juice ran clear at 90 mins

Depends on the temperature you cook it at!
I'd estimate approx 40 minutes per kg at 180 ish. So 90 minutes- 2 hours with 2 hours being the upper end.
If you over cook it you will dry it out. I'd plan for it taking 2 hours plus resting but be prepared to take it out and rest it longer.
