Limited number coming for Christmas dinner, steak is DS’s favourite, something he always orders in a restaurant or steakhouse.

What do I buy?
Best tips for cooking ( medium rare).

Go for fillet or sirloin and about 225g (8-10oz) per person. Me and the dc normally have 6oz.
Get it out of the fridge about an hour before cooking so that it’s about room temperature. Rub it all over with a good lug of olive oil and a good pinch of sea salt and black pepper. Add the steak to a hot pan, then cook for 6 minutes for medium-rare, turning every minute. After cooking, rest the steak on a plate that can collect all the juices for a couple of minutes.

Get a meat thermometer - a decent one doesn’t have to be expensive, you just need it to read quickly.
then google the temperatures of rare medium well done.
don’t forget it will carry on cooking slightly when it rests - so take it off when it’s at the lower end of the temperature.

Supporting your local butchers is great if you can afford it, but Aldi’s aged steak is great too

Touch the tip of your index finger with your thumb. Poke your thumb muscle with your other hand. This is what a rare steak feels like when it's ready. Thumb to middle finger and it feels like a medium rare steak. Thumb to ring is well done.

(I used to work in a pub kitchen)
