Best beef bourguignon recipe please

Looking at Jamie Oliver's but I find his recipes at times hit and miss. Stupidly I said I'd make one for the meat eaters on Christmas Eve having never made one before. (Idiot)

Does anyone have a really lovely recipe or can tell me how JO one turns out?

I wasn't a fan of Jamie Oliver's, but that might just have been the way I made it!! This is the recipe I use. Julia Child's Beef Bourguignon (Boeuf à la Bourguignonne) - Platter Talk. You might be able to find pearl onions in the freezer section if you're lucky, if not you can substitute for another kind of small onion.

Delia's is always reliable.
I make it the day before, tastes much better that way.
Great with mash or boulanger potatoes , green beans

I do Delia's too.
And definitely make it in advance of Christmas eve if you can, it will taste better on reheating.

I agree with @xmasdealhunter that Julia Child has the best recipe ever and hers is the one I use.

I have her cookbooks but I feel sure it is available online, reliably from Julia herself, as it is one of her iconic recipes. The link provided takes some questionable liberties: Chianti and Zinfandel will substantially change the taste of a bourguignon, to say nothing of the claim that one may swap out the wine for ‘grape juice or cranberry juice’. No! Just make something else. (I agree with everyone about the onions)

Also, Julia’s recipe calls for finishing the dish with a sauce made from the cooking liquid plus butter and flour, which is very delicious. The link skips this step.
