Chicken Soup recipes - both smooth & chunky

Does anyone have any recipes for really nice chicken soup, with some veg in them too?

I’m looking for recipes that are either able to be blended smooth and more chunky ones (which DH and I prefer).

DS is terrible with refusing veg but loves chicken and has said he would like to try a chicken soup, so I hope to find a recipe where I can blend the soup very smooth and he’ll never know that it has some veg in it too.

I was also going to recommend the above recipe. I take it we all googled ‘best chicken soup recipe’ at one time 😂 ( I don’t add the couscous, but have added pearl barley.)

Sometimes I blend this until it’s very thin and add noodles to it - kids especially love it that way.

I'm a veggie, but I used to make a very quick soup for the ex. I cheated a lot with the ingredients, because I CBA with him!

Buy a bag of mixed casserole or soup veg. Cook in 1.5 - 2L of chicken stock. Add whatever herbs you fancy. Blend with a hand blender once cooked if you want to disguise the veg. Chuck in a load of shredded pre cooked chicken and warm through. Job done 😁

If you want to 'see' the veg, then make a beurre manié to thicken the soup from its watery state to make it more of a soup consistency.

It’s gorgeously light and fresh but I do add lots of green chillies to the stock to give it a bit more oomph.

I made the best chicken soup on the back of this thread. As usual I didn't read the recipe properly and cut the chicken up before putting in the pan so it cooked quicker and I agree it was delicious.

I also use pearl barley, it's better for you anyway.
