The skin gives when I touch it.

Is tis right or do I need to chuck it?

And can I freeze it?

but even the slightly withered ones are good!!

Seriously though... don't bother freezing it raw, have never tried freezing it cooked as I suspect it may go horribly mushy. And you can definitely cook it even if there's a bit of 'give'.
