Does anyone have a nice recipe to use up a yellow pepper?

I use them the same way as I'd use a green or red one.
The nice bright colour makes things like stir fries look more appealing

I don't know if this is nice, but its very easy:

For two people
Two peppers cut in half
Small tin chopped tomatoes
Normal size tin of beans such as blacked-eyed, pinto, butter beans
Herbs or chilli powder
Very strong mature cheese

Mix the drained beans, tomato and flavouring and use to stuff the pepper halves. Top with the cheese. Hot oven until beans are cooked (about 35 mins on 200C)

Halve the pepper and fill with a mix of cooked rice and anything else you like then grated cheese on top and bung in the oven.

I love yellow peppers in Spanish food. So paella, or roast it with some onions and serve with spicy chicken and potatoes bravas.

Mince is nice mixed in with rice
