Red onions - recipe ideas please

So I have ended up with a ton of red onions - does anyone have any lovely recipes?

They roast beautifully. I've seen a few recipes on instagram where they're roasted in quarters with a bit of oil and balsamic and then served on something like a hummus or a bean mash with some feta or goats cheese.

I regularly roast them with tomatoes and garlic and have on couscous or lentils with feta/goats cheese at lunch.

Use at least one to make a really lovely pickle that will keep in the fridge for at least a few days to a week - I thinly slice then marinate in lime juice with a bit of salt and sugar. SOOO good added to things like tacos, or topping a steak sandwich etc or to punch up the flavour of a salad.

You can also just use them instead of brown/white onions as the base for things like mince dishes etc.

I also sometimes saute them with leeks and cavalo Nero, then a bit of salt and butter as a side dish. Especially good with fish.
