Dessert using frozen berries?

I have a bag of frozen, mixed berries I'd like to use up. Any ideas/recipes that don't result in a watery mess?

I make this hot berry sponge quite often. I just do the sponge mixture all in one (provided the butter is soft it works fine). When you blob the sponge mixture on it looks like it won't be enough and there might be gaps, but it always spreads when it bakes. I think it takes a good 45 minutes to bake. Delicious served warm with custard, or cream. Or both. Blush

We really like them heated up and served over vanilla ice cream - easy but yummy

Eton mess is always a winner. Make or buy some meringues, put a load of full-fat Greek yoghurt in a tray (it is thicker than whipped cream, so will cope better with melt water) and stir in the frozen berries, shake over a load of sugar - brown looks nicer - and leave that to defrost in the fridge.

Just before serving bash up all the meringue and sprinkle it on top.

If in a hurry, you can microwave the fruit to defrost it and drain the juice off, then mix into the yoghurt or thick whipped cream.

Cook them down and use them to top simple vanilla panacotta.

Same but on top of a whipped cheesecake. (Equal parts whipped cream and cream cheese, sugar to taste).

Pour the frozen fruit into a baking dish and cover with cake batter and cook as normal.

Clafutis is rather nice with mixed berries. Think soft almond/cake/custard.

If you are worried about them being watery, just thaw them in a colander over the sink first. This is what I do for crumble. But you want the juice for summer pudding so no need to thaw and strain for that.

Thanks everyone. I went with the sponge top inspired from @MotherofPearl recipe. I added some chopped apples, a little cornflour and sugar to the fruit. Then used a packet mix of sponge mix (just add eggs and water) to go on top. It was delicious with ice cream 😋

Cook them up a bit in a slug of wine. Cool. Spoon over smashed up shortbread/meringue/rataffia biscuits, stir in some ice cream, top with melted chocolate.
