Christmas vegetarian main with cheese and pastry

I usually just have veggie sausages but this year I’d like to make something ahead of time (the weekend before), and either freeze or cook from the fridge.

It will just be for me, so individual size is best and then I can use the air fryer and stay out of the oven! Any simple recipes that people have tried and worked well? I like almost all veg, but particularly carrots, peppers, mushrooms, cauliflower, and leeks.

Rather annoyingly, I didn't write down the recipe I made last year. But it was a winner and this is, more or less, what I did.

First I roasted relatively thin slices of butternut in the oven until soft and slightly caramalised.

I used puff pastry (pre-bought but unrolled), then rolled it out, scored as usual and pre-baked it.

When pastry and butternut were both cool I then made up a mixture of cream cheese and goats cheese and whipped it with a little mustard and some dried sage. I spread that over the pastry, then layered the butternut slices on top. Then, and this is th ebit I can't quite remember, I also added some walnuts and some sage - I think I toasted those separately and added them at the end though?

I did all this the day before. Then on the day I baked the pastry in the air fryer and added the walnuts and sage (I think). I also made a little honey/lemon/mustard dressing to drizzle over which I think made a big difference.

You could adapt to work for your preferred flavours.

Caramelised onion open tart topped with goats cheese. Or as you're fond of leeks, a cheese and leek quiche, you could use a cheddar type cheese in the quiche egg & cream mixture, then add some rounds of goat cheese as a topping.

Thanks to everyone above for suggestions. Sounds like I just need some ready made pastry, and then I can add in the veggies and cheese I like! Will give it a go (I’m usually very much a stick to recipes person)
