May I ask you to share your best imaginative ideas for using up roast chicken please? We eat a lot of chicken and am running low on inspiration (we don't eat pasta, rice or white potatoes). Please help!

Pie, soup (so many variations), stir fry, use up in a sandwich, frittata, tacos, tray bake, chicken Riesling, coq au vin, some curry variant, croquettas… What sort of things do you like as the possibilities are endless!!

We make chicken Ala king alot but that's normally served with rice or pasta. So I guess it would depend on if you have some other preference for eating it.

Chicken salad - we usually have this with garlic bread.

Stir fry.

Fajitas.

Chicken soup

I have used cubes of cucumber and some chopped walnuts to add the crunch to Caesar salad in the past when I've been trying to keep my carb intake down.

Chicken paprika - sweat some chopped onion, chopped red pepper with paprika powder, add natural yoghurt, let it bubble for a few seconds then add fairly finely chopped up cooked chicken and let it warm through. Goes well with cooked green beans, though also very well with vermicelli or other pasta.

My lot love ramen, there's an easy recipe on BBC food.

I do have a stuffed pepper recipe that uses rice but you could probably replace the rice with couscous or quinoa. You mix the rice and chicken with salsa, kidney beans and grated cheese. Stuff the peppers and put in the oven . Really easy.

I must confess I'm also struggling to imagine a rice, pasta and white potato free life...

Well flavoured risotto. Then either whisk some eggs and stir through, or, separate the eggs, stir through the yolks and gently fold through the whisked whites. Pour into a greased and lined cake tin and grate cheese over.

Bake at 180 in a roasting dish of boiling water until puffy and golden.

Risotto can be made ahead.

My go to is fajitas.

Off topic but how can you manage all meals without eating rice, potatoes or pasta?! I genuinely struggle to imagine doing that for more than a week, let alone long term.

Thanks, we love fajitas. I've followed a low-carb/Mediterranean way of eating for a long time (all the refined carbs make me feel rubbish) so mostly poultry, meat, seafood, sometimes beans/legumes, vegetables, dairy. Swap out things such as celeriac or sweet potato in place of potato, cauliflower rice instead of rice, courgette spaghetti (there is a very good low carb pasta from Holland & Barrett so we do have pasta now and then). My husbad does sometimes eat bread, potatoes, rice, pasta etc, but as I do 99% of the shopping, planning and cooking, this is the type of meal we have most of the time. The only thing I really miss is bread so I do have it as an occasional treat.

DH's mediterranean family and friends routinely use bread to mop up sauces from their pasta sauces... .just sayin' Grin

I think the overall attempt to reduce carbs, especially highly processed ones is right really, so I'm just teasing a bit. But the occassional bit of high quality bread can't be beaten!
