What can I do with lots of leftover herbs?

What type? You can usually freeze them.

If fresh you can freeze them in olive oil in cubes

You could dry & store them for later use.
Make a lovely herby tomato sauce
Herby bread or scones

I've yet to meet a herb I can't freeze in chopped form. Then you can sprinkle it straight in when you need it.

I’d prefer to freeze if possible - do they all work frozen? Do I just bag them and freeze?

I put mine in small tupperwares but a plastic bag is fine too. Sometimes I don't even bother chopping coriander and just scrunch it up from frozen as it doesn't need finely chopping and stalks are fine.
