Favourite chicken breast recipes

Just that really... I have 1 kg of chicken breasts that need to be used and I am looking for inspiration for what to make with them. Please share your favourite recipes / meal ideas - can be any cuisine. The more suggestions, the better as chicken is one of the more affordable meat options.

Following as I'm in the same boat!
They're on offer in Tesco this week. I got bacon too, as I like the combination.

I'm thinking club sandwiches (cheese on toast piled with sliced roasted chicken, bacon, lots of salad and mayo)
Chicken schnitzel with a rocket salad
Chicken Caesar something.
Creamy chicken pie with mash and veggies.

Maybe BBQ chicken casserole.

House chicken curry or butter chicken (mowgli cook book) or chicken korma (good food).

Good old fashioned chicken kievs are one our family favourites!

Also love chicken parmigiana and chicken & chorizo jambalaya

Stuff with something - I'll use a combo of cheese, toms, mushrooms, cooked onion etc - then wrap in parma ham before baking.

I prefer thighs; tastier, juicier & cheaper than breasts.

I find they're about the same price now. Breast was cheaper this week, but I've got thighs in buttermilk and thighs stuffed with sausagemeat and apple in the freezer that I prepped last week.

I ended up having salt and chilli chicken with egg fried rice! It was really good, a bit of prep involved though. I deep fried chicken pieces in a really light batter then added it to stir fry celery, onion and red pepper with chili and salt.

Chicken in a creamy tarragon sauce is a favourite here, serve with rice or mashed potatoes or tagliatelle. Nigella has a nice recipe for it, or BBC recipes will have one.

Other ideas are..... coq au vin, or hunters chicken with bacon and mushrooms, or an Asian style noodle chicken and vegetable broth.

Chicken breast coated in a mix of Parmesan, paprika and white pepper - pop on an oven tray and bake

Chicken breast cut to create a pocket, a dollop of pesto put in said pocket, then wrapped in Parma ham or bacon and once again baked

@Porridgeislife Thanks for reminding me about Chicken Paprikash. Such a delicious meal!

It's quite warm here in Aus, don't want to run the oven for too long. Think I'll cut them in half and do a fast tray bake with baby potatoes, red capsicum, carrots & celery. Because that's all I have in the fridge. With paprika on the chicken 😃
