What to do with green lentils?

Got given 2 boxes of Merchant Gourmet green lentils. Had a brief search in recipes section but everything comes up with tinned lentils. What can I do with them?

Merchant gourmet don't sell dried lentils, they sell lentils in pouches. Lentils in pouches are identical to lentils in tins, so use the recipes for tinned lentils.

Apart from that they actually taste good. Tinned lentils are pretty awful. The OP is in for a pleasant surprise.

They definitely used to sell dried puy lentils. I haven’t seen green.

Lentils in red wine. Chop and fry an onion. Add third of a bottle red wine, some stock, and green lentils (around 250g). Cook, adding more red wine as needed. When the lentils are done, add sliced chorizo and let it heat through.

I must say I’m astounded by amount of things you can make with them. For whatever reason it never crossed my mind to treat them the same as red lentils!

I do a sort of lentil ragu with sausages, the recipe depends on what I have in. Usually very finely diced carrots, mushrooms, onions with garlic and herbs. Add sausages and cook so the fat is released. Add a bit of tomato puree and stock along with the lentils and a pinch of chilli flakes. Tasty and healthy if you don't go wild with the sausage. Keep and freezes well.

Or cook them in veggie stock, and then serve them as a base for fried white fish, with a dash of Tabasco

Casserole them with pork chops or belly pork plus some winter vegetables.
Cook with some onions or leeks and cabbage, and serve with slices of gammon.

Lots of good ideas here already. Very versatile are lentils!

They're great in a winter salad.
Boiled for 25 mins in bouillon.
Then add grated fresh beetroot, shaved sprouts, radicchio, sliced chestnuts, sliced pear, red onions, crispy pancetta and pomegranate seeds. You can use a bit of olive oil and lemon for the dressing.
I always served that at my Xmas buffet and it keeps quite well for a few days. X

I have today made a cottage pie with green lentils and mushrooms chopped small.
Onion, carrot, celery softened, add garlic, chopped mushrooms, lentils, tomato purée and fresh thyme. A little bottle of red wine, then topped up with stock and simmered for an hour. Top with cheesy mash and oven for 40 mins. Was delicious!

I've used the same recipe but used oregano instead of thyme and hey presto bolognese. My mushroom hating niece, so she says, loves it. She doesn't know there are mushrooms in it.

Fry off some soffritto and then cook with the lentils in veg stock. Great side for things like ham, chicken legs, sausages and duck if I had ever cooked duck .
