Oh I stick em in my biggest saucepan (oven happy) bring to the boli on the hob then and stick them in the oven for at least half a day - conventional oven about 100 deg c maybe.

When I had an Aga I would put them in the simmering oven overnight OMG the stock was just heavenly.

Heh, mine are in at the moment I leave for a few hours - anything between two and four depending on when I remember it's there.

Chuck them in your slow cooker, if you have one, and leave til it tastes like chicken stock!

1 or 2 hours on low heat will do. If you boil it furiously it will go cloudy - but still taste fine. Are you sticking onion, carrot, celery & peppercorns in it?

Bottom oven of aga is easy because you can fall asleep and forget the stock and it won't mind at all! As long as you remember it's there in the morning.

No, a shake of any pepper will do. Or none at all. I stopped putting salt in my stock when the DCs were tiny and never got back in the habit. It tastes fine.

The onion is important, carrot & celery improve the taste but aren't absolutely essential. And you can always improvise, lump of old celeriac instead of a stick of celery, parsnip instead of a carrot etc.
