Inspiration needed for a coeliac packed meal

I need to make some packed meals, lunches and suppers. One of each has to be suitable for a coeliac. The supper will probably be eaten about 9h after leaving home.

Lunch may well have to be eaten on the run, or at least standing up, so will be sandwiches. They dislike GF bread, so would prefer not to have sandwiches again for supper.

The obvious supper would be soup or stew, but would it still be at a decent temperature after 8-9h?

Does GF pasta make a decent salad? And would it still be decent 24h after being made?

Any other suggestions?

Potato salad and meat or fish?

Tortilla. Lots of veg in an egg base, with cheese on top, cooked until solid (either in a fry pan or oven or airfryer). Delicious cold if you get the ingredients right. Can be served with salad- I'd serve it with a quinoa salad to change things up a bit.

As PP I was going to suggest a fritata, I make a really nice one with new potatoes bacon and onion in, topped with cheddar. It travels well and really filling.

Rice based dishes too. Dont do sandwiches they're vile! Cheese and onion or sausage rolls etc for lunch, anything like risotto or frittata, etc go naturally gf if you can.

I’m not clear if this meal will be refrigerated for the 9 hours or not?
and do you have access to something to heat it up?

if able to keep it chilled I’d do something like cold cooked new potatoes, hard boiled eggs (halved) - if you cover the egg with salad cream or mayo it won’t smell too strong. Add olives, tomatoes, sliced cucumber.
add feta or cheddar chopped (omit egg if not liked)

the potato can be replaced with cooked pasta.

perhaps gluten free crackers - they often come in packs of a few within the box. Some cheese spread or philadelphia to go with them.

pudding ideas if the meal is a bit light:
individual tub of yogurt, custard, rice pudding.
banana to slice into it.
carton of smoothie or milkshake

No and no. I'll put an ice pack in if it's the sort of food that should be chilled.

Some good ideas, thanks. I think they will like a fritata - and I can made the same for everybody.

Marks and Spencer s bread- 6 slice kne is very nice- expensive though. John West lunch on the ho- lentil one is gluten free. It ok. Doesn't need refrigeration. Pasta one too, but not sure what that is like
