My easy go to meal is:
1x large onion chopped and fried in curry paste, add s bit of water at the end .... and whoosh into the slow cooker! Followed by 1/2 pack of frozen mix vegetables (you canadd frozen/ fresh peppers if you like) , 1x can chopped tomatoes, 1x can of drained chickpeas, some coconut milk powder (or a can of coconut milk) 400ml of veggie stock. Some chilli flakes to taste.

Cook on low for 8 hours, season with extra curry powder, salt & pepper to taste.

Serve with bread or rice.

Obviously you can use fresh vegetables or chicken to fry with the onion .... you could add lentils or butter beans. Any combination that works for you.

Ooh I'll be trying this one. I usually cook curry on the hob but I would love the ease of doing one in the slow cooker. Thanks

Having a look at taming twins, her recipes are all great. The Chinese beef and broccoli and the chicken noodles in particular
