Can anyone help me with a beef wellington (recipe and weights)

Disclaimer: I happily cook meat but don’t eat it myself, so need a hand with a reliable recipe.

cooking for my meaty family members a SMALL beef wellington this Xmas.

I could do with knowing what weight of fillet to ask for to feed 4 hungry adults, plus a good reliable recipe for the filling layer, plus accurate timings for that appropriate weight. I would look to be cooking to medium rather than rare as they are all happy with that.

can anyone help? Thank you.

A beef wellington is a very ambitious option for someone who doesn't eat meat, even if you don't mind cooking it. There's the mushroom paste, the pancakes, the pastry, getting the temps right etc. Personally, as you only have 4 adults, I'd buy one in so that all you have to do is cook it.

The BBC good food recipe is pretty reliable. I’ve used it with good results.

Making the mushroom duxelle takes a lot longer than you think to dry it out but the faff is worth it. I make it for 8 people and buy 1 kg beef fillet so I reckon at least 500g of beef for 4 people. It weighs a lot more than that once you put the duxelle and ham and wrapping it in butter puff pastry.I make it the evening before and chill in the fridge overnight.

I’m am experienced cook and don’t mind a challenge - but equally would have bought a good made one could I have found one with a good review - most are awful!
