I'm making a Spanish chicken type dish on the weekend for a family gathering, with chicken, chorizo, olives, tomatoes, peppers, smoked paprika etc. I need to make something similar but vegetarian for two guests.
Was thinking very similar but to put slices of fried halloumi and chick peas. Would that work or make sense even?!
Any ideas on how to give it a tasty flavour without it having the deliciousness of chorizo ?
