What to do with sausages

Just checked in the fridge and we have sausages due to be used up today. Any suggestions for what to do with them before I give up and just make sausage and chips?😆

I'd do a traybake and roast them with potatoes/sweet potato and whatever veg I had....and coat them in a honey mustard mixture

I chop them up and make a sausage pasta sauce with chopped tomatoes, chilli, maybe some broccoli.

What's wrong with sausage, chips (+egg) perfect Friday night dinner.

Personally my favourite meal in the world is sausage, mash and onion gravy.

Sausage pasta bake is always a winner in our house - Passata, tomatoe purée, pasta, stock of your choice (I usually use vegetable) , whatever herbs you fancy but I use garlic and parsley, peppers, onions and a bit of kale.
Or sausage and mash with onions gravy and peas 🤤

Macaroni cheese with chopped up sausages mixed into it is so delicious. Loads of black pepper on top.

Baked in the oven with some onions and peppers and herbs, paprika? You could slice potatoes in there as well. Just cook for an hour or two.

Sausage and bean casserole. Toad in the hole.

Sausage pasta with chopped onion, garlic, sliced mushrooms with a bit of cream mixed into stock and grainy mustard. Lovely! Or toad in the hole with whatever veg you have about on the side.

Sausage and fennel ragu. Take the skins off, shape into meatballs. Fry them off and make a standard pasta sauce, we all love fennel seeds with pork but doesn't need to be.

Our favourite sausage pasta is:

Roughly chop sausage and fry gently. When coloured, add fennel seeds, chopped garlic, chopped chilli (optional) and some lemon zest. Stir for a minure or two then add a handful of chopped tomatoes. Leave to cook for a few minutes then add equal amount white wine and milk and allow to reduce for 5-10 minutes. Add a couple of handfuls of frozen peas or baby spinach for the lats couple of minutes then stir through a generous dollop o(or a few) of creme fraiche (you can use cream if you like but be less generous). Season with salt, pepper and lemon jucie and serve with a generous grating of parmesan and black pepper

To be fair he'd probably have sausage every day of the week.
He also likes all day breakfast, toad in the hole, sausage and mash, sausage and bean casserole.

Or teriyaki glaze on the sausages and any other veg you have. Hoisin is also nice on sausages.

Posh sausage tray bake - add sausages to tray with some dijon mustard and dash of honey, roughly chop up some fennel, red onion, sweet potato, mixed peppers.

Sweet potato and onion wedges, drizzle with a little oil, salt and smoked paprika. Bake in the oven for a bit add the sausages, bake a bit longer. Sometimes I chuck broccoli in too

We had sausage, mash, Yorkshire pudding and onion gravy for dinner it was delicious and the kids ate a mountain of it.

Sausage casserole - you can freeze any leftovers.

Or just oven cook them, chop them into 1 inch chunks and freeze. You can use them as pretend meatballs in a tomato sauce at a later date.

Some lovely ideas, thanks all! We went with a sausage stir fry today but I will be trying out some of those sausage casseroles and pasta bakes for sure!

Thats been my go to ever since I discovered it few years back and everyone I tell about it love it as well

Because its so rich and yummy, I often make it with those wee cocktail sausages that are reduced to clear around Christmas ( our supermarkets here are laden with them ) They are the cheap sausages but the casserole flavours hide it and sometimes for me, I miss the sausages and bacon out altogether and just have it as a bean casserole :)
