Your really easy ideas for pudding and maybe starters for mexican meal

Hi helpful people. We've asked a couple of friends round and my husband wants to do veggie tacos for the main. For starters I'm thinking guacamole, salsa etc, maybe a few mexican chicken wings, but still very open to ideas on starters. Especially keen though to hear of any ideas for an easy dessert to go with all of this.

( I'm veggie but I often cook meat for others which is why we're relaxed on a combination of veggie and meaty food.)

Any tasty and relatively simple and easy ideas would be very much appreciated.

I recently made these churros when we had people round. Looks harder than it is because it involves deep frying but easy to make in advance and reheat.

Mexican ice lollies I.e. fruit ice lollies with a bit of taijin seasoning on/in
Fresh watermelon with lime juice, chilli and salt on. Chamoy if you have it

I hadn't heard of tres leches cake but it sounds tasty, I'd be interested to try a cake with milk and tea in it. Thanks @SummaLuvin and @Keroppi

My husband like rice pudding but I'm not so keen but thanks for taking the time to respond and give the link @Forgottenmyphone .

For dessert

  • Mexican-spiced brownies (eg chilli / cinnamon, etc), served warm with ice cream.
  • Passion fruit tart (I was served a delicious version that has condensed milk - haven't tried making it, but method looks pretty easy)

I don't think I'd want starter with Mexican. Surely you need guacamole and salad with the tacos? Also soured cream.

I often make a baked key lime pie for dessert after Mexican food. I love recipe, and it’s handy to make in advance.

You could add in a queso fundido (with mushrooms rather than chorizo) or instead of tacos you could go down route of tlayudas (oaxcan pizzas which are fabulous)

Or for a starter you could make a mini batch of esquites which is a delicious broth packed with sweetcorn and topped with sour cream and some totopos

If you can get hold of poblano peppers I'd definitely do rajas tacos - so good

For soft drinks I love hibiscus agua fresca - you can buy dried hibiscus quite easily now - online or I have found some in a local middle eastern store..

PS - can I come?!

@myrtleWilson thanks for your ideas. They sounded delicious. Queso fundido especially.

I had been brewing a sore cold/ cough and by last night I was putting a brave face on it, not coughing openly, but feeling a bit rubbish. Husband took over and came up with a slightly strange but still nice ( although not remotely Mexican) starter of beetroot and fennel and blue cheese salad. For dessert I thawed out some of our cooking apples and made my boring but perfectly edible apple and raspberry crumble.

I'll invite you to the next one and I'll try and make the fundido and you can bring the dried hibiscus and we'll give that a go!

The mini margarita cheesecakes on that site also would have filled the bill. I love that website - I’ve made so many things from it. Sally’s no-knead bread is something I make a few times a week (haven’t bought sliced bread in years) and I’m doing her chai-spiced apple pie for a Thanksgiving dinner. I like how she realises she has an international audience and includes metric weight measurements instead of everything being in cups. Though I’m American myself I find it much easier to bake in metric.
