Gluten free "buttery biscuit base"

Raera · 14/11/2024 12:08

I have a lemon pud recipe which we like. I usually use digestives or ginger nuts for the base. I'm making this on Saturday but need a gluten free base this time. Can anyone recommend suitable biscuits please?
I can easily get to Aldi, Lidl, Sainburys and Morrisons.
Thank you!

Gluten free biscuits are one of the few GF products that don't taste that dissimilar to the gluten versions- digestives are definitely available but I haven't spotted ginger for a while. Have a look at the other options to see what might go well with your recipe!

Sainsbury's is probably your best bet- Aldi and Lidl don't have much free from food and the section at my Morrisons is dire!

Schar's digestives are good for a biscuit base.

Their Spekulatius biscuits might work too.

Tesco and Sainsburys both do gluten free ginger cookies that work well. Or as pp suggested, spekulatius are a bit like lotus biscoff and also work well.. I have used all of these for cheesecake bases, as well as digestive or chocolate digestives. You might need to use a little more butter as gluten free biscuits are a little drier than normal biscuts.

You won’t get anything gluten free in Lidli or Aldi. Most Sainsbury’s and Morrisons have a good selection, you’ll definitely get either digestives or ginger biscuits from either.

I use these for cheesecake bases.

They're not as hard as regular ginger nuts so make a lovely base. Most of the supermarkets do similar (not Aldi/Lidl)

Both Aldi and Lidl have great gluten free sections near me. I buy their gluten free digestives for dessert making all the time.

Many thanks for your replies all.
My take is that really any appropriately flavoured gf biscuit will be fine, but use a bit more butter
