While we are on the subject of meals, what do you have for lunch?

Please can I have some inspiration for lunchtimes - it's usually just a sandwich of some sort (when going to work), on weekends I might stretch to somethingorother on toast (beans, poached egg, that's about it). Or soup. Don't really want to do a big meal, main meal in the evenings (loads of ideas from the other threads - thanks!).

Lunchtimes are so dulllll.

Avocado on toast is deeeelicious me and dd love this.

I am bored of sandwiches too, but just recently started trying different spreads such as guacomale, (sp?) beetroot, tomato sandwich spread, i add them to my usual fillings for extra flavour.

Avocado and smoked salmon or prawns atm as trying not to eat as much bread. Or soup.
