The carrot cake is weird, you make a smoothie of carrots, eggs, sugar and oil then add the flour. But, it works.
So different to standard carrot cake. Some sort of spice mix would probably be great.

Ive been reading recipes for it, I dont know how you get the carrot mixture completely smooth to be honest without cooking the carrots first. My blender would probably conk out but then its not very good

Mine is a Lidl cheapie and managed very well.
I was ready for disaster but all was well.
If in doubt, you could grate the carrots first. I didn't find it necessary to move to plan B.

Christmas Parkin

12 oz medium oats, zap in food processor if necessary
5 oz flour
1 tsp bi carb
half tsp baking powder
3 tsp ginger
1 tsp cinnamon
1 tsp mixed spice
half tsp 5 spice
half tsp white pepper
mix

6 oz butter
12 oz black treacle
6 oz brown sugar
melt

1 egg
3 tbs milk
mix

some citrus peel, crystallised ginger and stem ginger finely chopped and mixed into the dry stuff

Mix it all together and put in lined 22cm tin at gas mk 3 for 1 hour 20 mins.

If you take out the peel, fruit and crystallised ginger that is exactly my Parkin recipe. It's how my Granny made it back in the 60s and I had her handwritten recipe on a piece of lined paper all the way through to when I made it with my own DC.
