Ideas for using cooked beef

Had a really good rib of beef a while ago. Just two of us eating it so had a very generous roast dinner off it and some beef rolls for lunch the next day.
Had about 400g left and decided to freeze it. Now trying to run the freezer down a bit pre-Christmas so think I'll cook it tomorrow.
My initial thought is another roast beef dinner, reheating the sliced beef in gravy, but would be interested in alternatives from MN.

Slow cook or pressure cook til it falls apart. Then make a yummy ragu with red wine and have with tagliatelle. Divine

Liking the Rendang idea. I'm tempted by the ragu but it was such a nice piece of beef I think I'd like to keep it sliced or cubed.

Yum, indeed and I did those the day after we had the original roast. I just fancy doing something a bit more complicated tomorrow, as I usually try to do a fancier dinner on a Sunday.
I do preparations in between watching the Come Dine with Me and Four in a Bed omnibuses Blush

Not a fancy dinner option but I sometimes make pasties with leftover meat/veg/curry. Not proper Cornish pasties but still jolly good!

Yes and that's a really good idea. The pastry, duxelles and ham will eke out the beef beautifully and I could use the vegetables I was going to do with just the sliced beef and gravy - thank you Smile
Really appreciate all the other suggestions too (still have plans for some of them on other occasions).

My mil years ago was a cook and when we stayed with her she would use the left over beef by mincing it and together with onion would put this in a Yorkshire pudding. It was really tasty.
