What is a really delicious veggie lunch I can make for friend coming up to see me ?

Quiche, it's easy and quick to make (if you cheat and buy the pastry like I do) but also nice to have a homemade version.

Serve with a side salad and maybe some soup if you want as well.

I was going to suggest similar - flat bread, halloumi, hummus, roasted veg and some leaves on the side.

I came to say HM quiche. But thinking further, I would love proper Welsh rarebit. Crusty bread for the toast, great cheese with some added horseradish, all hot and golden and steaming. Plus a beautiful salad to go with it. 🥗

Or a fritata with blue cheese and leeks with a green salad and apple slaw on the side.

I am easily pleased but my my favourite ever would be tomato or minestrone soup and cheese and garlic toasties. Can make it a bit more interesting by adding a bit of chilli or pesto etc but it's so good at this time of year! Even better if the soup is in a mug for some reason.

I love a nice fritata, with onion, peppers, sweet potato, spinach and feta. Serve with nice bread, salad and maybe some bits like olives, houmous etc?

I love soup in a mug, people at work judge as there are bowls and spoons but it makes me happy to hug my mug.

I always have soup in a mug.
I actually own V expensive le creuset soup bowls but never use them as I want my soup in a crap Strictly Come Dancing mug that someone I don't like bought me for Christmas years ago!

Glad I'm not the only one with with a dedicated soup mug! Mine is from my football team's club shop and is solely used for soup.

Channa chaat - chickpeas, red onion, cooked and diced potato, tamarind, chaat massala, coriander and pomegranate seeds. Top with a dollop of yoghurt and more coriander and pomegranate. Utterly delicious and a bit different. Could get some good veggie samosas or bhajis to go alongside.

Otherwise, the Green Roasting Tin shallot and cheese tart with a nice salad.

I looove shaksouka and flatbread but.. Shaksouka imho ia beat with absorbant fluffy bread😁

I invented it so it doesn't have a name...
Get a ramekin (1 per person). Line it with grilled aubergine or grilled courgettes - leave them hanging over the edge.
Fill with cooked mushrooms or peppers. Top with a round of goats cheese. Folder aubergine or courgettes over the top of the cheese. So you make like a little parcel.
