New to batch cooking, can anyone help?

I usually eat fresh and replace in days, so lots of salads and such.

But I would really love to try making broths/soups full of seasonal veg and herbs with chicken.
I know that I can cook a huge pot and put servings in sandwich boxes in freezer, but is this ok with the chicken? I have not frozen my own chicken before so not sure how to proceed safely as usually eat it fresh from store.

Do I just cook it all up and then cool it, then freeze?
Also, how to defrost if I want it the day after? Do i have to let it sit in the fridge for an unspecified time? This makes me nervous...

I just cook, cool, portion, and freeze, never had a problem.
I usually take it out to defrost the night before I want it and put near the front of the fridge. So it defrosts in the fridge overnight. Reheat til it's steaming hot.
I LOVE batch cooking soups. I also sometimes freeze shredded chicken on it's own and stir in to whatever needs some extra protein. I sometimes find it dries the chicken out a bit but it's always been perfectly safe ime.
