Does anyone know what the runny cheese is that you get on nachos when you buy them from a restaurant? My son wants me to make some nachos but he hates melted grated cheddar

What about some type of squeezy cheese? Primula is the only one i know or Doritos do a cheesy dip, that might work. Or maybe melting a cheesey sauce mix in the microwave then pour it on.

OP, I found this product on Sainsbury’s just this week and gave it a try on nachos - it was good! The company have previously made guacamole hence the “Holy Moly” name.

If you want to make your own it's essentially just a bechamel-based cheese sauce. You can add paprika, ground chilli and/or diced jalapenos for an extra kick.

You can make it by using those cheese slices you get for burgers (the orange plastic cheese 🤣).
Just make a cheese sauce the same way you’d make a cheese sauce for macaroni but use the orange square sliced cheese instead of cheddar and you get cinema style nacho cheese sauce.
Can take a bit of experimenting with ratios/amount of milk.

Yes, this. It’s called queso sauce. Basically, make a white sauce, add chilli powder, garlic powder, cheddar and jalapeños to taste. It’s super easy to make.

Agree with @Onthesideofthespiders it's the only method I've found that tastes similar to cinema/pub quality. I add diced green jalapenos and a bit of paprika.

Costco actually sell it in a massive tin. We got it on offer a while ago and I froze it in portions in freezer bags. We had nachos, steak and cheese baguettes, Mac and cheese, dirty fries galore over the following weeks/months 🤣 it is identical in flavour but you get a LOT. I think it was around £8

Melt a tablespoon of butter in a pan and add a spoonful of flour. Cook for a few minutes - it will come together in a paste. Slowly add a can of evaporated milk, mixing after adding a little each time. Add some grated cheese - you can buy grated cheese with chillies from Asda which is fab for this - or normal grated cheese and some chilli flakes. Keep stirring and add more evaporated milk until you have a nice consistency. It's delicious and perfect for pouring over nachos.
