Pressure cooked beef casserole- tough meat: advice, please!

I bought a CrockPot multi cooker recently, to replace a rice cooker and an old slow cooker.

It's made amazing risotto (in 6 minutes!) but last night's beef casserole (goulash, in fact) was disappointing.

I used a pressure cooker recipe, fresh beef, same as I would for a slow cooker, prepped it all via sautéing then had it on a high pressure cook for 15 mins as per recipe.

It tasted nice but the meat was quite tough, whereas in the slow cooker it would have melted.

What did I do wrong?

I imagine you either need to start with a better, more tender cut of meat or cook it for longer. 15 minutes does not sound anywhere near long enough for tough meat to get tender, it's barely long enough to cook through.

Looking at other online recipes it looks like 30- 90 mins is standard for a pressure cooked beef stew rather than 8 in a slow cooker. So 15 mins was nowhere near enough.

Give it another go but give it longer

Hello @Fordian -following with interest , as I’ve had a similar experience recently .
We had a Prestige hi-dome pressure cooker for many years , but as it won’t work on induction hobs have purchased another and I just can’t seem to get the timings right …..

I agree that 15 mins seems short for a casserole. I’d add at least an extra 10mins, if not more for really tender meat.

I would cook beef casserole/stew for around 45 mins plus natural pressure release.

15 mins isn't long enough.

I also use a longer time - 40 minutes, on high pressure for beef. Mince can be done more quickly.

This is interesting, I have an instant pot so pretty similar set up. When I slow cook meat it's really tough so I then change it to pressure cooking setting for about 20 minutes and it's super tender. I'm doing something wrong with the slow cooking...

I pressure cook beef stew for 35
minutes. I always use brisket and it turns out lovely.

I have an instant pot and all my beef stew recipes from the app call for around 40 minutes plus.
I did one on Friday and it was lovely after 45 mins cooking.
