Has anybody got any idiot guide/fool proof recipes for the best Tai Green Curry ever?

I have a group of friends and in an attempt to cheer me up last week one couple cooked dinner for me and the other friend - Tai Green Curry ... twas very nice, then this evening we all went to the other friends house to try out his Tai Green Curry and a sort of competition has evolved - now although the competition is strictly between the 2 who have already cooked, i thught it would be nice to invite them all here one evening next week .... my problem being I have never made Tai Green Curry and tbh wouldn't have the first idea how to begin ... but I feel that I should return the favour and thought that my (or MN) version of Tai Green Curry would be the way to go - so wise mnetters can anybody help me?

Here's a pretty straight forward recipe - have used this one myself and it's pretty damn good

It's meant for 4 people, but if there are more then just adjust it were needed.

Thai Green Curry

There are more complicated recipes but as it's your first attempt, this one is pretty foolproof but tastes just as good!

Thank You, I will try that and hopefully win the competition Will let you know. Oh and by the way I do know how to spell "Thai" even though every time I typed it in my op I put Tai Must be lack of sleep and a couple of glasses of wine - can't believe I didn't even notice it until now

I always throw in a pile of sugar snap peas, sliced in half, with about 5 mins to go.
Adds a lovely crunch.

Also you can get the Thai Taste paste from Sainsbury's or Tesco. It is just on the shelf, in a plastic container and will last a long time.

Hello - Thai green curry - OMG - bliss!!! my absolute favourite thing in the world.

The basic recipe on the channel four site looks good - i used to follow a strict recipe which involved fish paste, soy sauce, sherry and something else that i cant remember, used to work out blardy expensive.

So last time i made it, i bought some Thai curry paste, some lemon grass, lime and red chilli's, stir fried the lot with the chicken, mange tout and baby corn, added the coconut cream (this worked better than milk for me) - bobs your uncle, fanny's your aunt!! better than the complicated recipe - i did bung some fish oil in last time i made it, and it did give it a deeper flavour.

Blimey, ive given advice on cooking - i am a kitchen disaster but i loved the green curry so much and couldnt afford to eat out to have it all the time

Thank you everybody ... it's tomorrow night .. judgement night, I have the ingredients - I bought:- Chicken(obviously) Thai Green Curry Paste, coconut cream, runny honey, red chilis, fresh corriander, basmalti rice but I couldn't get a lime, so got a bottle of lime juice! Does anybody know how much I should put in???
I also got some aubergines as per AmIWhatAndWhy ... but not too sure whether to attempt adding them?
I will let you know the result of the competition tomorrow evening - fingers crossed

Thank you everybody - competition went well, friends have just left and they were very impressed .... however, my sauce dried up - I did another lot as per recipe because it looked very dry and there still wasn't that much sauce to go around ... wonder what went wrong - having said that i am a firm 1st/2nd place which isn't bad so thank you MN
