Soaking fruit. Is Sherry okay and can you leave it for a week?

I won a bottle of sherry in a raffle. I’m not a major fan of drinking sherry so I thought I might use it for my Xmas cake. I usually use brandy. Do you think sherry will taste okay?

Also I am really busy in the week so realistically I will soak the fruit one weekend and make the cake the next. Is it okay to soak for a week.

My last question is amount. I usually just keep adding more and more alcohol and the fruit seems to soak up an endless amount. I use WAY more than suggested by the recipe. Is that to the cake’s detriment? Can you add too much?

Yes Sherry is fine, great in fact.

I leave mine soaking for ages, often a month or more and it's always fine!

Same! I never find it causes any problems and my cakes are always delicious!

Both fine, sherry is lovely for fruit cakes and let the fruit absorb as much as it will!

I always have a jar of drunk fruit in the press for baking, there months at least.
