Easy to bake but tasty cakes

DC's sports club is hosting a tournament soon and running a food stand. I've been asked to bake a few things for it (instead of helping set up and run it). For the end of year party I made a caramel cheesecake and am a bit reluctant to make the same again. Ideally I need something easy to make, that they can portion and sell and eat easily, not sure cheesecake is suitable. I also need to make everything on Friday and take in Saturday and some for Sunday (I won't have time to make anything Sat evening as other DC has a concert).

I think I'll make these muffins but not sure what else to go for and what will keep well for the Sunday.

I too was going to say brownies, but with something colourful on the top either with icing, sprinkles or jelly beans maybe.

This is normally a biscuit recipe, but a tray bake is even easier and its egg free. I normally drizzle some melted chocolate over the top to look nicer. https://bakeplaysmile.com/anzac-slice/

You could also make some Rice Krispie squares, they would be quick and easy, and probably popular

OMGitsnotgood · 18/10/2024 09:33

I agree with all the suggestions of lemon drizzle, easy to make and very delicious.

This weetabix cake is very quick and easy (although you need to start it the night before you want to bake). I halve the amount of sugar.

Rocky road is a great suggestion, very quick to make lots.

Good old fashioned rice crispy cakes always sell well. I put some sprinkles on the top to jazz them up a bit.

@OMGitsnotgood thank you for the link to the Weetabix cake for the comments alone!

@OMGitsnotgood thank you for the link to the Weetabix cake for the comments alone!

The comments for the Weetabix cake are hilarious!

Cake wise, I would probably do banana loaf cake or dorset apple tray bake from BBC.

Ilovemyshed · 18/10/2024 17:53

How about a tea bread? I've a decent recipe if you want it.

mamaduckbone · 18/10/2024 18:04

Rocky road always goes down well and doesn't even need baking.

They would, but unfortunately many people, perhaps especially children, go for the most sickly/lurid looking cakes imaginable. The more complex flavours of parkin and gingerbread (and fruit cake) are less immediately appealing. For a bake sale I'd go for something that's definitely going to sell.

Chocolate gingerbread (Nigella's recipe) is a good all rounder.

Assuming the DC are mid teens or smaller, the Halloween muffins look like the ones that will sell quickest to the kids.

So, who will be buying?

Kids?
Go for the spiders webs and maybe something with pink /purple/glitter on top. I'm not the prettiest baker, but helping out on bake sales, my cupcakes with mountains of chocolate icing and sprinkles, or pink icing and silver sprinkles were always one of the first to go. The other very popular thing with primary kids was krispie cakes.

If the adults are buying, I'd do lemon drizzle.

Well, if you like muffins, then try these 3 ingredients banana muffins and for cake, this chocolate protein cake recipe might help.

Made the weetabix cake yesterday, thank you for the recipe. It's really nice , like a moist tea bread but super easy

OMGitsnotgood · 19/10/2024 17:00

Glad you liked it @3smallpups. Did you reduce the sugar? I find it too sweet otherwise.

3smallpups · 19/10/2024 17:26

Yes I halved it as suggested and it's fine
I did have it with butter though , but I do love butter so ..

OMGitsnotgood · 19/10/2024 17:51

Oh yes it is lovely with butter even tho it defeats the object of it being a fat free recipe

Redragonoteal · 31/01/2025 09:42

@OMGitsnotgood I saved your recipe and have just made it. Now I came back to the thread to say it's in the oven right now and I see you said to halve the sugar 🤦‍♀️ do you bake it on 180 fan or 180 top/bottom heat?

OP posts:
OMGitsnotgood · 31/01/2025 09:48

@Redragonoteal you might find it ok with the amount of sugar in the recipe, I just find cakes too sweet if I don't reduce it.

We have a fan oven and I bake it at 160, which is our oven's equivalent to gas mark 4.

Redragonoteal · 31/01/2025 18:13

It is rather sweet!
