Any fabulous Pork medallion recipes out there?

I've googled and am feeling uninspired. I don't cook pork very often as I am not a huge fan. I usually buy pork fillet and do a (I think Jamie Oliver) recipe with rhubarb, parma ham, garlic and thyme but don't fancy that.

A quick google gives loads of variations of it in a creamy mushroom sauce, don't fancy that either, nothing else I fancy from what I've seen.

Does anyone do anything nice with pork medallions?

Not a recipe as such and you may not count as 'dinner' food, but in parts of Spain you can get a sandwich called a serranito, which is a pork medallion, with crispy serrano ham, grilled green pepper and allioli in a crusty roll. You could swap the bread roll for chips if you want it to feel more like a meal.

We sometimes also use pork fillet in a Thai curry or egg fried rice or with a noodle stir fry.

I'm going with Schnitzel. I'm going to go with a souped up version here. I've got everything more or less, pea shoots instead of watercress (obviously no quails eggs of course although maybe that's in the normal mnter's fridge 😂). I'll just poach a normal egg and have it with crushed new potatoes and something green. Oddly I even bought gruyere yesterday as it was part of the 2 for a fiver deal!

I forgot about my Great British Chefs subscription, there's a sandwich a bit like that on there @Bjorkdidit but I can't find it again to link.
