Will I get food poisoning if I eat cooked chorizo that was 6 months past it's 'Use By' date?

I accidentally put 6 months old chorizo in a pan with my perfectly caramelised shallots until my bf pointed out I had just put in chorizo that he reckons was old. I checked and it said Use By 4/24 (April) and it's 10/24 (October). It doesn't smell bad and tastes good, I'm getting an aftertaste I don't recognise but maybe it was the caramelised onion so I don't know.. will I get food poisoning?

I don't know, but please come back and let me know as I have some that has been opened for about a month (wrapped, and in the fridge) and I see it says 'once opened consume with 5 days' , and I hate throwing food away.

I eat things until they look or smell like they shouldn't be eaten. I've had chorizo that I've eaten way past the sell by date and I've had chorizo that I've be thrown out bed cause it as obviously off. I'd say if it looked ok, it is ok 👍

The sliced stuff from the deli/cooked meats/chilled section? Or the whole sausage stuff? I'd say the latter you'll probably be ok (if it hadn't been previously opened), not so sure on the other.

If it wasn't green or runny or smelled obviously rank I'd have eaten it too tbh.

A month past, for chorizo, I would eat if everything looks and smalls normal.

6 months? Well, you've eaten it now, and I suspect you'll be fine. But if you've got ant left, I think I'd bin it. That said, I suspect it has too little moisture for many things to grow in it.

In this case, I wouldn't eat it since it's been opened and bacteria can form in that time just by oxidising. I wouldn't have even eaten the 6 month old chorizo if I had known despite it being closed. It tasted alright but because I was focused on it being old, I couldn't enjoy it as much. So far I'm not feeling sick from it.

I'm a bit of a germophobe so I normally stick to the recommended dates on food packages apart from the odd few times I'll eat something 2 days past or so. @TwoLeftSocksWithHoles

Those cured chorizo rings are basically indestructable. If it's been in the fridge I'd say it's probably completely fine! They'd survive the apocolypse! (bear in mind when you buy them at the supermarket they're nto even refridgerated).
