Steak sandwich

I had a delicious steak sandwich this year - melt in your mouth steak that wasn't thick.

I never know which one to buy though - they're either too thick or too tough. Advice needed please!

I get a thin cut sirloin and make sure I don't over cook it, a bit pink in the middle is better than over cooked boot leather.

Hardly ever have a steak sandwich, just isn't on the list of things I think of but they are bloody lovely, especially on lightly toasted ciabatta.

I would use sirloin. Bash it around a bit and season and marinade for a couple of hours to tenderise.
Or was it more like a Philly cheese steak? Where it's very thinly sliced meat? I'm a big fan of pastrami, though that's not quite the same thing.

It shouldn’t be at all, but you need to cook it really hot and fast. Cooling it too slowly and for too long will be making it tough.

The minute steaks aren't great, not a great cut in those usually. I like to buy a sirloin or if really feeling flush a nice fillet when they are on offer and then cook it and cut into thin strips, nothing nicer in a steak sandwich!

One of my guilty pleasures is a steak sandwich made with fillet steak. It happens once a year and I plan it in great detail.

Part baked baguette from the deli. Caramelised onions cooked slowly until almost sticky. Reduced peppercorn sauce for some punch - made in advance and cooled before reheating so it’s thick enough not to make anything soggy.
