I've been vegetarian nearly all my life and have been disappointed with restaurant offerings and cook books the whole of that time.
My local pub only seems to offer quinoa and falafel both of which I detest. Plenty of dry grit in both of those things.
Even Gordon Ramsay can only offer cauliflower "steak" my least favourite meal which manages to taste of old socks everytime.
People like Ottoleghi are fine but it would cost me about £40 per recipe for ingredients and they are so complicated with ingredients not available in Somerset.
Well I've just discovered Nadiya Hussain and spent £30 on her two vegetarian cookbooks. They are amazing!! I'm an absolute convert. She is such a great cook.
Anyone else have any favourite veggie books.

The green roasting tin.
I also really rate the recipes in the Riverford and Abel and Cole sites

I love Delia Smith's vegetarian recipes including these:
www.deliaonline.com/recipes/international/mediterranean/greek/vegetarian-moussaka-with-ricotta-topping
www.deliaonline.com/recipes/type-of-dish/pasta-recipes/roasted-mediterranean-vegetable-lasagne
And her vegetarian shepherd's pie

There are also hundreds of recipes on BBC Good Food. I make at least two a week from there.

I’m a lover of Meera Sodha. Her most recent three cookbooks are all vegetarian (Fresh India, East and Dinner). East is my go to weeknight cookbook, it’s from recipes inspired by all across Asia, they work really reliably, don’t need lots of specialist ingredients and they’re largely simple and healthy enough for weeknight cooking. So many of our weeknight staples are from that book.

Madhur Jaffrey's 'World Vegetarian' - the mother of all veggie cookbooks.

The Plant You : Scrappy Cooking book is excellent and has plenty of low cost, plant based recipes in 😋
