Morning, does anyone have any tried and tested salmon terrine recipes? Thanks!

I tend to make mine up,
line a small tin with clingfilm, then lay smoked salmon in it.

in the blender mix a fresh salmon fillet, more smoked salmon and a tub or 2 of cream cheese depending how much I need.

then flavour accordingly, usually I add parsley, chives, lemon juice.

theres a nice looking one on this Christmas m&s food order option that would be quite easy to replicate

@Billybagpuss This will probably sound silly but it's my first attempt what consistency should the cream cheese mix be? If you're just adding lemon then it should stay pretty much the same?

Not silly at all, it was fairly squishy when I made it the first time so I partially froze it the next time and sliced it then served. It tasted gorgeous but masterchef it was not.

hopefully someone will come along with a more solid version.

It was actually 7yrs ago that I made this- so took me a while to find the pic!

I 'think' I used this recipe, but replaced the chervil with dill and spring onions. I didn't add the accompaniments from the recipe and used a loaf tin as a mould. I lined it with cling film, layed the smoked salmon inside, so sections overhung the sides and also covered the inside of the tin. Once I added the filling in, the overhanging salmon wraps over the top to form a lid. Once set, you turn it out, upside down- so the base of the tin becomes the top of the terrine. I've also seen much smaller, individual versions, if that is what you'd prefer to do for say as an entree. https://www.deliciousmagazine.co.uk/recipes/individual-smoked-salmon-terrines-for-christmas/ I haven't tried this recipe, and you can see that the pic if professional, unlike my real, homemade, huge one. 😆

I more or less do t he same as @Billybagpuss you can also add in capers.

I poached some salmon yesterday in a mix of mainly water with a few peppercorns, and a spoonful of gin and lemon leaves. The leaves were an experiment but I will do it again.

I've seen it served in a jar rather than stand alone so if it isn't a stiff as you like OP you could try that, put it in a jar or a ramakin.

Well here it is.

I didn't have any capers and I couldn't get the lid of the lemon juice so it's made with cream cheese, crème fraiche, diced cucumber and chopped smoked salmon.

I was going to do the shop yesterday, but ended up having a lazy day. However, I'll nip out after work for some bits so will probably add this on to it and have a bit of a tester run.
