Talk curries with me - Indian curries specifically

i need some inspo on Indian curry bases AKA thorkas.

i do the standard punjabi thorka time and time again.

I want to mix it up and start trying different ones.

the standard one: ginger, garlic, green chilli, onions, garam masala, methi, coriander, tomato, cumin, turmeric and salt.

help me! 😆

Have you tried recipes from the Dishoom or The Curry Guy Bible cookbook? Both have excellent curry recipes in there. I have both books and have tried multiple recipes - just like restaurant food. They are time consuming but not difficult.

so the dishoom recipes I’ve done. The other book I’ve never heard of! I will have to investigate.
