Minestrone soup recipes please!

Planning on making minestrone from scratch tonight but stuck as to what recipe to use! There’s so many online that I have no idea which one to go for..

Help me out MNers!

2 tbs ish of olive oil
1 onion
1 leek
2 celery sticks
2 carrot sticks
2 cloves garlic
Dried Italian herbs
Bay leaf
1 tin of tomatoes
2 tbs of tomato puree
2 pints of stock
1 tin of canellini or butter beans
100g of shredded cabbage
2.5 oz small pasta shapes - we like to use conchiglie but if you can find it, conchigliette is better!

Method:
Chop the onion, leek, celery, carrots and garlic and sweat them for around 10 minutes.
Add the remaining ingredients except the pasta and simmer for around 30 - 40 minutes.
Add the pasta and simmer for a further 10 minutes until the pasta is done.

We like it served with cheese flute after it's rested for a few minutes in the bowl so that's it's not scalding hot.

Aw, that's a shame. I have used BBC in the past, but I don't usually put the courgette in.

I find with the above recipe, that the flavour improves after a day or so, but you may also find that the pasta shapes have expanded which is why I use the smaller shapes. You may also need to add a bit more water as the vegetables has soaked up more liquid.

Cubed smoked pancetta to start. Then add diced onion, celery and carrots. Then a chopped courgette. Then a diced sweet or normal potato. Can of plum tomatoes. Cover with stock or water. Then a can of cannellini or mixed beans (I rinse them), and a few handfuls of pearl cous-cous. Simmer until the potato and pasta are done. Check seasoning. Finish with chopped parsley. Serve with slivers of Parmesan and crusty bread. Delicious.

I basically follow @xsquared has written but also:

open fridge, rummage through veg drawer and left overs, extract odd bits that are vaguely Italian (remnants of fennel bulb, leftover basil, cavolo Nero or any other kale, old bag of spinach, veg and gravy left over from a roast, dregs of wine), chop small if choppable, add to pot and simmer
