Oh, all sorts of things! Anywhere you’d like to add some umami. I use it in salad dressing, noodle sauce, soup (for example I used it in some beetroot and ginger soup today), miso butter (delicious with scrambled eggs). It’s a good ingredient to experiment with.

I use it instead of fish sauce in Thai curry, and any other recipe that requires fish sauce.

Miso mushroom pasta is lovely too.

Also worth knowing that you can store it in the freezer and it stays soft and scoopable.

I add it to anything which needs extra umami/savoury eg soup, stew, bolognaise, chilli works like stock. I had it in a gingery prawn soup for lunch today. I'm going to try the miso butter too.

I made instant ramen noodles last night and added a spoonful to the broth.

It's lovely in an Asian-style salad dressing too!

This braised aubergine miso braised aubergine is an absolute knockout dish. It simple to make and really delicious.

Miso butter greens pasta is a wonderful recipe. It's rich, full of flavour and has a a sauce made mostly of green vegetables so I feel good eating it.

The Ottolenghi salad above is also great. And if you eat a vegetarian food, it's great to bring in an extra savoury note to dishes which can lack it, like when replacing minced beef with beans or lentil or tofu.

Honey miso cod. Marinade the cod pieces in the miso paste, pan fry and add a small drizzle of honey as it cooks so that it caramelises.
