Advice about chocolate ganache

Hello!

I've made a cake for tomorrow. I'm planning to make white chocolate ganache tomorrow morning to top it with (cream and white chocolate only).

I'm a bit confused about storing it - should I put the cake in the fridge? It's currently at room temp as it's just an almond cake. With buttercream I keep out but there's cream so I'm not sure! The recipe doesn't give guidance on storage and I am feeding it to my wider family so want to make sure it's safe.

No it doesn't need keeping in the fridge provided you bring the cream to the boil properly when making the ganache, I'm not a fan of the microwave method of heating the cream and chocolate together until choc melts, personally I don't think the cream gets hot enough that way. I put the cream in a saucepan and bring to the boil then add to the chopped up chocolate, let it sit for 5 mins or so then stir and hopefully the bulk of the choc will be melted, if not you might need bursts of 15 seconds in microwave and stir each time.
