Hi guys,

I am a useless cook!

I like to use a meat thermometer to check when meat is properly cooked.

Does anyone know what temperature sausages need to be internally, to ensure they are thoroughly cooked?

I can't be bothered to Google (of course you could if you wanted) but in general meat should be cooked to 75° the first time. If reheating it's 82°.

And did you know that sausages, well good-quality ones with 97%+ meat, also benefit from being rested, just like steaks or roasts?

@OMGitsnotgood Well I only discovered fairly recently, by accident. Had cooked sausages in the oven, turned it off and then was delayed from serving up immediately by something. Came back, dished up and ...
Mind you these were exceptionally high meat content, not sure if you would get the same effect withan average British banger.
