Cooking or eating apples?

LakeFlyPie · 15/09/2024 15:03

Stewed Apple, peeled, cored and chunked and cooked with a tiny bit of water in pan until just fluffed up. Keep an eye to make sure it doesn't catch on the bottom of the pan. I don't add sugar. Once cooled can add cinnamon and raisins to taste (wait overnight for the raisins to plump up)

Apple cake
8oz caster sugar (6+2)
2 eggs
1/4 pint milk(hot)
4oz melted butter
6oz plain flour
3 tsp baking powder
3 apples (peeled and sliced / chopped)

Mix eggs + sugar (6)
Add butter, milk, flour and baking powder
Pour batter in tin
Add apples to batter
Sprinkle sugar (2)and cinnamon
50-60 mins 160 oven

Apple chutney

-Stew and freeze to use in a crumble at another time. Pick blackberries and add to it
-Make chutney
-Make a spiced apple cake and freeze or eat now
-Cook the apples whole, strain overnight and use the liquid to make a clear jelly such as mint, chilli, rosemary etc
-Whole, baked apples
-Apple sauce and seal in jars

@JC03745 the jelly sounds interesting, I saw a short video online of someone making it and it looked delicious. I'll look into it, do you know of any recipes?

Stew them and add other fruit like blackberries if wanted. It freezes well.
Chutney
Make apple butter

I just stew them with a little sugar and cinnamon then freeze in crumble sized portions. Then when I have a day where I fancy pudding I can take it out and add crumble topping, or cobbler topping or sponge mix or pour it into a pie case and it's ready to go in the oven while dinner cooks. It's also great in porridge.

Cooking apples become surprisingly sweet if you store them into the Spring L Otherwise, I add them to lots of savoury dishes

Edited

I can't find the exact recipes I've used, but very similar. The main thing is to let the jelly bag, or pillow case, or muslin, just drip overnight. If you squeeze it, the liquid will become cloudy.

Homemade Apple and Mint Jelly Recipe

I love apple mint jelly and although there are many recipes out and I have tried a few, this is the one I use year in and year out.

You could make burgers https://secretsauce.co.uk/meat-poultry/burger-recipes/bramley-burgers-with-apple-sauce/ and meatballs https://www.britishapplesandpears.co.uk/recipe/bramley-apple-meatballs-with-creamy-mash-and-bramley-apple-cranberry-sauce/ The burgers freeze well. Haven’t tried the meatballs from frozen.
You could also make apple chutney which is lovely on a cheeseboard at Christmas!

You’ve got a problem we share, @PronounsBaby <eyes giant stack of windfalls on kitchen table>

How about spiced apple butter?

PronounsBaby · 15/09/2024 21:11

Lots of great suggestions!! Thank you all

You could try making a classic apple crumble or apple sauce for freezing. Apple chutney is another option or try Auberginen Fatteh Rezept, or even a simple spiced apple compote for breakfast toppings.

Do you defrost first please , or just add the topping and straight in oven ?

Any ideas for what to do with eaters? Sorry to jump in. We've got loads! Made chutney, pork and roasted veg with apple, Waldorf salad, but running out of ideas. I'll try mincemeat this week.

Spongebobcircletop · 17/09/2024 07:32

For baking, have a look at the recipes on janespatisserie website. They pair the apple with cinnamon and it is amazing.

You can make Apple butter with eating apples too. A slightly different recipe to the one I posted upthread - you don’t even need to peel them!

Apple Butter Recipe

My super easy apple butter recipe is perfectly spiced with rich fall flavors. It takes just 10 minutes to prep with NO peeling required!
