Dinners you can make with a toddler running around?

Dh is out this evening - and I need to get dinner sorted for us all preferably something with leftovers for lunch.

toddler is going through that phase where he can’t be left alone too long or I find him at my legs tugging me lol

so I’m looking for suggestions on super quick dinners - I have courgette, salad, onions, Parmesan in the fridge that need using
happy to pop out for anything else

I'd make a zucchini slice (you can Google the recipe) with the toddler. It's a good one to make with a toddler because you just mix all the ingredients together.

Alternatively beans on toast.

Scrambled eggs. Call it an omelette if you can grate some cheese or chop the courgette.

I have a 2.5 year old who goes through phrases of getting upset if left on the other side of the gate and a partner who works shifts so I'm often there at dinner time on my own.
Easiest option I have found is to have her in the kitchen with me and include her (or if they don't want to help you could have some small toys in the kitchen or colouring etc).
If that's not an option then: beans on toast, scrambled egg, something from the freezer you can put in the oven and leave like fish fingers and chips or leftovers.

Slow cooker is another great one- put it on earlier in the day either with little one or while they are busy with something (or napping if your lucky enough to still get that!). Then all you have to do later is serve.
I do cheat and get microwave rice for days like this.

Courgette pasta. I’d grate the courgette and fry till soft, add a bit of cream or soft cheese if you have some and add the cooked pasta. Lots of Parmesan.
