so I’ve bought a bag of sweet potatoes and actually have no idea what to do with them
would like to get them all used or frozen

please send your fav recipes!

Peel, or nor whichever you prefer, chop.i to decent size chunks. Drizzle over olive oil, salt, black pepper mix do all coated and roast in oven for 45 mins. Can be served with anything.

Can also add spices such as cumin, paprika etc for a change

Bake them and have with butter as an accompaniment.

Make sweet potato soup

Can be made into chip or wedges.

Chicken or sausage traybake with sweet potato, peppers, onion, courgettes.

Mix with root veg and roast instead of normal potatoes

Soup with leeks and coconut milk. Loads of salt and pepper, a few chilli flakes and some proper butter to cook the leeks in. X

To make mash, really quickly, stab them with a skewer or a fork, microwave for about 5 mins. They will be soft and you can just squeeze the flesh out from the skin. Bigger ones will take longer. You can do this with swede too.

Chop up and use in a. Curry so they cook right down and make it thick and yummy.

Sweet potato and coriander soup is delicious. I've also put chunks of it in veggie casserole.

Here's a Chinese recipe which is a warming dessert for a few people;

Bring to boil and simmer a thumbs worth of sliced ginger in a small saucepan of water, with one big inch cubed sweet potato.

Simmer until the sweet potato is soft. Strain out ginger and add sugar to taste. Serve hot; a sweet soup.

The gingery broth is really zingy and feels great if you've got a cold. if by luck you've bought a good sweet potato it goes all fudgy and super sweet.

Added bonus is adding (found in frozen section in Asian supermarket) red bean mochi while it's cooking.

@nocoolnamesleft it's a Sabrina Ghayour recipe and usually serve it with a whole roasted harissa chicken and a shirazi salad.

I cut them into wedges, cover them in olive oil, sprinkle paprika and add chopped jalapenos. Put in the oven and roast. I do the same with chickpeas.
