Non meat meals without alternatives

I'm cooking some meals for a family member who can just pop in the microwave at meal times.
Not a big meat eater, only sausages / pie no alternative vegetarian meats liked but loves veggies.
Could you suggest any meals that microwave well?
I've got so far -
Cheese pie /beans
Cauliflower cheese
Maybe mac & cheese
Sausages, mash, veg & gravy
Pie & mash with veg & gravy
Stuffing with a veg mix & gravy
Homemade veg soup
Veg curry
Jacket potatoes
Have I missed anything that would be a winner or that microwaves well?
Unsure how pasta will be though maybe a cold pasta salad would be ok?

Potato and other vegetables gratin
Potatoes Lyonnaise
Potatoes Dauphinoise
(above can all have other veg added in layers for variety)
charred aubergine curry
Squash curry
vegetable chilli
leek and goats cheese risotto
if they eat fish: fish pie, tuna and pasta
cassoulet
veg bolognese (tomatoes, courgettes, aubergine, onions)
mushroom and chestnut bourguignon with baby onions
Wild mushroom chestnut celery and barley in port slow cooked
tis the season for stews!

Pasta should be fine (think microwave ready meals) so you could add veggie lasagne, spinach and ricotta cannelloni

Other wise:
Vegetable tagine
Shashuka
Aubergine parmigiana

I make a vegetarian cottage pie that is very similar to this recipe. It's lentil based rather than using any form of mince and very tasty. I'm not vegetarian!

Google Delia Smith's vegetarian recipes. She doesn't use meat alternatives. Her vegetarian moussaka, lasagne, shepherds pie are all delicious.

Vegetable pasta traybakes reheat in the microwave perfectly well
Moroccan Vegetable tagine is good: cooks very well in large batches.
Could they manage to make cous cous by just pouring a measured amount of boiled water onto it in a Pyrex jug and microwaving it for a minute, or cook their own rice in a microwave rice cooker?

Cauliflower walnut burritos from tasty.co website.
So so easy and my kids love it.

Walnut, mushroom and lentil bolognese
Red lentil pasta with pesto and fried Moroccan tofu
Stuffed mushrooms
Oyster mushroom gyro meat in pita

I also make a weekly load of chocolate zucchini muffins from ifoodreal.com and I can't bake for shit but these are great.

Spaghetti Putanesca if they will eat anchovies

If not, wholemeal pasta with a slow-simmered sauce of tomatoes, black olives and garlic.

Both sauces can be frozen in portions & reheated. If preferred, they can be served with jacket potatoes.

Chilli made with diced peppers & courgettes, grated carrots and mushrooms, and equal quantity of beluga lentils, kidney beans and black beans plus plenty of seasoning.

Ratatouille is good to make in big batches. I like to top it with some strong unmelted cheese when serving - either goats cheese or stilton.

Big stew with butternut squash and Aubergine.
