What on earth should I do with them? Hit me with your best largely egg based recipes.

I end up with about 7 eggs a day, so I feel the expert of using up eggs! homemade mayo is a good one, I do an egg mayo sandwich, quiche, pavlova, Spanish omelette are all my staples, also egg curry. also eggs last ages and you can freeze them in various forms.

Eggs have a long shelf life, so you've got time to use them all.

Some ideas....
Baked egg custard tart

Custard or baked custard to serve with stewed fruit

Yorkshire pudding, use an extra egg to get a spectacular rise! Toad in the hole and Clafoutis made with plums

Cheese soufflé

Lemon meringue pie

If you make meringues, use the yolks to make ice cream

Pickle some - hard boil first obviously.

I leave any old eggs out i the garden for the local wildlife.

Egg fried rice.

Bake a couple of potatoes, scoop out some potato flesh, break an egg into the potato and bake.

Chinese chicken and sweetcorn soup.

Cakes.

Pickle them! Hardboil them, buy a big jar of pickling vinegar, pop them in, add some fresh chillies if you like spice - leave for at least a month, then eat. YUM.

Thank you all for the suggestions, definitely going to be pickling some, and I might try that Amalfi lemon tart that sounds lush

Bit late but there’s a classic orange and almond cake (uses whole boiled oranges) tends to require about 8-9 eggs.
