Tell me about Carrot Cake...

It's my husbands birthday this week and he loves carrot cake! Looking for one that is super moist (urgh I hate that word) with a delicious cream cheese frosting. Shoot me with your favourite recipes. Thanks all

The frosting on this cupcake recipe is delicious. The carrot cakes aren't bad either!

Recipes with vegetable oil rather than butter seem to make the cake more moist
