Batch cooking ideas

Hello all,

In a bid to eat healthier and cheaply I visited the local fruit and veg market this morning.

Plenty of bargains were had including a bag of a massive broccoli, a ginormous cabbage and a average saved cauliflower and four carrots (£3!!)

You get so much for the money and I want bach cook some meals to freeze. But I'm so bored of Bolognese (in all it's forms) and various veg currys.... Does anyone have any recipes they are willing to share?

I'm particularly stumped by the cabbage...is so huge (bigger than a football) it will go into at least 4 different batches of meals!

I also have the staples (more carrots) pots, peppers and onions. And a well stocked herb and spice shelf.... Any ideas will be gratefully received 🤞

I’d probably make a cauliflower/broccoli cheese.

I’m not great at batch cooking as I normally only cook for two but I’ve found her recipes to be quite handy and I like the “grab bag” freezer option.

Stuffed cabbage. Either stuff the individual leaves or you can make a sort of pie this one is vegan but you can stuff with whatever you want.

I do the individual leaf route - you need to blanche them for a few mins so you can roll them. I usually fill with mice, mushrooms, herbs, wrap them up, put in an oven dish and pour over passata and bake. But for batch cooking I would put 1 or two rolls in a foil container and pour over the passata and freeze like that.

Soup is easy, throw in the cauliflower leaves and stem.

Make a batch of cauliflower cheese and freeze in individual portions.
